Chicken Satay

  • 2.5 lb chicken breast cut into 2-inch long strips
  • 1/2 cup full fat plain yogurt
  • 1 tbsp Madras curry powder
  • 1/2 tbsp garlic salt
  • 2 tbsp sugar
  • 1 cup sliced onion
  • 1 tbsp oil

Spicy Peanut Sauce

  • 1 tsp oil
  • 1 tbsp ginger minced
  • 1 clove garlic minced
  • 2 tbsp peanut butter
  • 2 tbsp hoisin sauce
  • 1/2 tbsp sugar
  • 1/2 tsp sambal chile paste
  • 1 tbsp coconut cream
  • 1 tbsp water

Instructions
 

Chicken Satay

  • Add chicken into a large bowl with yogurt, curry powder, garlic salt, sugar, and sliced onion. Mix well and allow to marinate overnight.
  • Heat a grill pan on high heat. When the pan is hot, turn fire to medium. Brush pan with oil and sear chicken strips 3-4 minutes each side, or until cooked through. Serve with spicy peanut sauce.

Spicy Peanut Sauce

  • Heat a medium sauce pan on medium heat. When pan is hot, add oil, ginger, and garlic. Saute garlic for 1 minute.
  • Then add in hoisin sauce, peanut butter, sugar, sambal, coconut cream, and water. Allow to come to a gentle simmer, then turn off fire.
  • Taste for seasoning and add salt, sugar, water, or coconut cream as needed to adjust for flavor and texture. The sauce should be thick, but slightly runny.
