Classic Garlic Herb Prime Rib Roast

Growing up in the USA, Thanksgiving and Christmas are huge holidays, full of their own food traditions and holiday recipes. My family has decided to forego some foods that we’re not fond of, such as turkey and stuffing. But we fully embrace prime rib roasts, mashed potatoes, and pumpkin pie in all their glory. This garlic herb prime rib roast is one that I’m very proud of. It has taken years for me to perfect, but here it is. Roasted to a perfect medium rare, it will satisfy the hungry masses. Pair it with some fluffy cheesy mashed potatoes and creamed spinach, and you’ll give even Lawry’s Prime Rib a run for their money!

How to Make the Perfect Prime Rib

  • Use a meat thermometer
  • Use butter to rub the outside of the prime rib roast
  • Season generously with salt and spice mix
  • Use a roasting rack and roasting pan. Place liquid and aromatic vegetables in the pan to create pan juices while roast is cooking
  • Broil at 500 degrees F for 20 minutes to create a nice crust, then turn oven down to 300 degrees F and continue roasting until the meat thermometer reads about 115 degrees F.
  • Let your garlic herb prime rib roast rest at least 20 minutes

Classic Garlic Herb Prime Rib

A delicious garlic and herb rubbed prime rib roast. Perfect for the holidays.

Equipment

  • 1 oven roasting rack and roasting pan

Ingredients
  

  • 4 lb boneless prime rib roast
  • 1 tbsp butter room temperature
  • 1/2 tbsp garlic salt
  • 1/2 tbsp seasoned salt
  • 2 tbsp dried rosemary
  • 1/2 tbsp steak rub
  • 1 tsp black pepper
  • 2 bay leaves
  • 2 cloves garlic minced
  • 1/4 cup dry red wine
  • 1 cup water
  • 2 stalks celery chopped
  • 1 small onion chopped
  • 1 carrot chopped
  • 1 tsp beef base
  • salt and pepper to taste

Instructions
 

  • Cover prime rib roast in butter. Then combine garlic salt, seasoned salt, dried rosemary, steak rub, and black pepper. Evenly spread seasonings over the surfaces of the prime rib roast.
  • Allow roast to sit in the refrigerator at least an hour to let seasonings absorb and stick.
  • Take out prime rib roast to allow to come to room temperature for an hour before roasting.
  • Preheat oven to 500 degrees.
  • Place prime rib roast on a roasting rack to elevate it in the roasting pan. Then place carrot, celery, onion, garlic, red wine, and water on the bottom of the roasting pan. This will start the au jus while the roast is cooking.
  • Place roast in the oven. Broil for 20 minutes to create a crust. Then turn oven down to 300 degrees and roast for 50 minutes or until it reads 115 degrees F. Take roast out and allow to rest 30 minutes. While resting, the roast should reach the ideal temperature for medium rare: 120-125 degrees F.

Au Jus

  • Take the pan juices and roasted vegetables and place into a pot. Add 1/4 cup water to slightly cover the vegetables if needed. Add a tsp of beef base. Simmer on low for 15 minutes. Add salt and pepper to taste.
  • Serve au jus sauce with prime rib.
