I love a good vegetarian pizza. It lets the cheese and natural clean flavor of veggies shine. This easy vegetarian pizza recipe is extra special because it is a new take on the classic ratatouille stewed vegetable dish.

This is such an easy vegetarian pizza on a pita crust. And because we are using a pita crust, it is so effortless and quick. Perfect for a busy weeknight dinner! Just throw it together and put it in your oven. It will be done in 10 minutes or less.

If you want to make this a plant-based recipe, just omit the cheese. You’ll still have a delicious crust of pita bread with nicely broiled veggies.

Ratatouille was made famous by the Disney movie. It is a French dish made in Nice. Ratatouille ingredients are: tomatoes, eggplant, summer squash, bell pepper, garlic, onion and tomato sauce.

How to make ratatouille for easy vegetarian pizza

Ratatouille is actually an easy side dish that you can make for your dinner.

The beauty of ratatouille is that you can thin slice all your veggies, which makes cooking them very easy and quick.

I like to assemble my sliced veggies in a cast iron skillet with sauce and then broil in the oven for 10-15 minutes, until they are slightly softened.

Since eggplant is a bit denser, it requires some searing ahead of time to make sure it cooks all the way in the oven.

I am a huge fan of these little shortcuts. Mostly because I used to be baking impaired and could not throw together a pizza crust to save my life.

Although I do love an easy pita bread pizza, my all-time favorite easy pizza crust idea is garlic naan bread. So delicious, airy, and crispy!

Easy Vegetarian Pizza -Ratatouille on Pita

Ingredients
  

  • 1 tsp oil
  • 4 slices eggplant thinly sliced
  • 1 tsp olive oil
  • 1 pinch thyme
  • 1 pinch basil
  • 1/4 yellow squash thinly sliced
  • 1/4 zucchini thinly sliced
  • 1/2 tomato thinly sliced
  • 2 slices onion thinly sliced
  • 4 slices bell pepper thinly sliced
  • 1/4 cup marinara sauce
  • 2 cloves garlic minced
  • 1 cup shredded mozarella
  • 1 pinch garlic salt

Instructions
 

  • Heat pan on medium. When pan is hot, add in oil and sear eggplant slices 2-3 minutes each side until slightly softened. Set aside after done.
  • Coat sliced vegetables with oil and sprinkle with chopped basil and thyme.
  • Pre-heat oven on 400 degrees F
  • Place 2 pita pockets on a lined baking tray. Spread with a thin layer of marinara sauce followed by minced garlic and mozzarella cheese.
  • Assemble rataouille in circular overlapping pattern on top of pitas, alternating between the veggies:
    eggplant, tomato, yellow squash, zucchini, bell pepper, onion.
  • Add a pinch of garlic salt on top of vegetables.
  • When oven is pre-heated, placed pizzas into the oven. Bake for 8-10 minutes, or until cheese is golden and veggies have softened.
