Chicken Satay
- 2.5 lb chicken breast cut into 2-inch long strips
- 1/2 cup full fat plain yogurt
- 1 tbsp Madras curry powder
- 1/2 tbsp garlic salt
- 2 tbsp sugar
- 1 cup sliced onion
- 1 tbsp oil
Spicy Peanut Sauce
- 1 tsp oil
- 1 tbsp ginger minced
- 1 clove garlic minced
- 2 tbsp peanut butter
- 2 tbsp hoisin sauce
- 1/2 tbsp sugar
- 1/2 tsp sambal chile paste
- 1 tbsp coconut cream
- 1 tbsp water
Chicken Satay
Add chicken into a large bowl with yogurt, curry powder, garlic salt, sugar, and sliced onion. Mix well and allow to marinate overnight.
Heat a grill pan on high heat. When the pan is hot, turn fire to medium. Brush pan with oil and sear chicken strips 3-4 minutes each side, or until cooked through. Serve with spicy peanut sauce.
Spicy Peanut Sauce
Heat a medium sauce pan on medium heat. When pan is hot, add oil, ginger, and garlic. Saute garlic for 1 minute.
Then add in hoisin sauce, peanut butter, sugar, sambal, coconut cream, and water. Allow to come to a gentle simmer, then turn off fire.
Taste for seasoning and add salt, sugar, water, or coconut cream as needed to adjust for flavor and texture. The sauce should be thick, but slightly runny.
