Chicken Satay
- Add chicken into a large bowl with yogurt, curry powder, garlic salt, sugar, and sliced onion. Mix well and allow to marinate overnight.
- Heat a grill pan on high heat. When the pan is hot, turn fire to medium. Brush pan with oil and sear chicken strips 3-4 minutes each side, or until cooked through. Serve with spicy peanut sauce.
Spicy Peanut Sauce
- Heat a medium sauce pan on medium heat. When pan is hot, add oil, ginger, and garlic. Saute garlic for 1 minute.
- Then add in hoisin sauce, peanut butter, sugar, sambal, coconut cream, and water. Allow to come to a gentle simmer, then turn off fire.
- Taste for seasoning and add salt, sugar, water, or coconut cream as needed to adjust for flavor and texture. The sauce should be thick, but slightly runny.
