Cinnamon Apple Yogurt Parfait

Ingredients
  

Apple Compote
  • 1 tbsp lemon juice
  • 2 apples peeled, cored, and cubed
  • 1 tsp pumpkin spice
  • 2 tbsp brown sugar
  • 1 pinch salt
  • 1/4 cup water
Yogurt
  • 2 cups full fat plain yogurt
  • 2 tbsp white sugar
  • 1 tsp vanilla extract or paste

Method
 

Apple Compote
  1. Add apples, lemon juice, pumpkin spice, brown sugar, salt, and water into a medium saucepan. Simmer on medium for 15-20 minutes.
  2. Stir apple compote occasionally for even cooking.
  3. When apples begin to soften, but still hold their shape, remove from heat and allow to cool at least 10 minutes.
Yogurt
  1. Mix together yogurt, vanilla extract/paste, and sugar until well incorporated. Set aside.
Assembly
  1. Add in 1/4 cup of the prepared yogurt into a glass cup. Then add a layer of apple compote. Top with another 1/4 cup of prepared yogurt. Add another layer of apple compote. Optional: top with pre-made granola.
