Cover prime rib roast in butter. Then combine garlic salt, seasoned salt, dried rosemary, steak rub, and black pepper. Evenly spread seasonings over the surfaces of the prime rib roast.
Allow roast to sit in the refrigerator at least an hour to let seasonings absorb and stick.
Take out prime rib roast to allow to come to room temperature for an hour before roasting.
Preheat oven to 500 degrees.
Place prime rib roast on a roasting rack to elevate it in the roasting pan. Then place carrot, celery, onion, garlic, red wine, and water on the bottom of the roasting pan. This will start the au jus while the roast is cooking.
Place roast in the oven. Broil for 20 minutes to create a crust. Then turn oven down to 300 degrees and roast for 50 minutes or until it reads 115 degrees F. Take roast out and allow to rest 30 minutes. While resting, the roast should reach the ideal temperature for medium rare: 120-125 degrees F.
