Curry Chicken Salad

A spiced cold chicken salad

Ingredients
  

  • 1 cooked boneless skinless chicken thigh
  • 1/4 cup mayonnaise
  • 1/2 apple peeled, cored, and grated
  • 1 carrot peeled and grated
  • 1 handful cilantro chopped
  • 1 handful roasted cashews chopped
  • 1 handful raisins
  • 1 tsp sugar
  • 2 tbsp madras curry powder

Method
 

  1. Heat a small skillet on medium. Add in curry powder. Allow to toast for 3-5 minutes until it becomes fragrant. Stir the curry powder every few seconds. Remove from heat and set aside.
  2. Chop up chicken into bite size pieces. Set aside. Then peel and grate carrot and apple.
  3. Combine chicken, carrot, apple, mayonnaise, raisins, sugar, cilantro, and curry powder. Top with cashews and serve immediately. Add salt to taste if needed.
