How should I cook white rice?

Steaming is the best method for cooking jasmine rice. I prefer the rice cooker method because I’m notoriously bad at making rice. The rice cooker makes it almost foolproof for me.

Usually you want to keep a ratio of 1 : 1 rice to water ratio for most medium grain jasmine rice. For short grain rice, it may be more of a 1 : 1.5 water to rice ratio. Check the packaging on your rice for best results and measure your rice and water.

What rice should I use for pork kimchi fried rice?

In most East and Southeast Asian cooking, short grain or medium grain jasmine rice is a staple. It gives a nice bouncy texture which holds up well when stir fried. Day old steamed rice is best.

What kind of kimchi should I use for kimchi fried rice?

A nicely fermented napa cabbage kimchi. Kimchi can be made with a huge variety of vegetables, but kimchi fried rice should use the napa cabbage variety. Look for one that has a deep rich red color. One that looks too light or white is likely going to be under-flavored.

Pork Kimchi Fried Rice

Equipment

  • 1 rice cooker

Ingredients

  • 1 lb pork belly diced
  • 1/2 tbsp sesame oil
  • 2 cloves garlic minced
  • 1/2 cup napa cabbage kimchi diced
  • 1/4 kielbasa diced
  • 2 cups cooked white rice

Sauce

  • 1 pinch salt
  • 1 pinch sugar
  • 1/2 tbsp gochujang
  • 1/2 bunch green onion

Instructions

  • Mix kimchi juice, salt, sugar, and gochujang together.
  • Heat a frying pan on medium high. Place pork belly and fry 10 minutes until fat is rendered and pork belly is crispy. Remove pork from pan and set aside.
  • Remove fat from the pan. Add in sesame oil, garlic, and kimchi. Stir fry kimchi for 3-5 minutes. Then add in kielbasa and rice. Fry another 5 minutes. Then add in sauce and stir fry another 3-5 minutes.
  • Add in crispy pork belly and chopped green onion.
